Frank’s Nice and Spicy Chili

Ingredients:

  •  2 large sweet onions diced
  • Couple of mushrooms, any type, chopped fine
  • 1 Bell Pepper diced
  • 3 jalapeno peppers diced, roots and seeds left in
  • 2-4 TBL spoons of freshly chopped and smashed garlic.
  • 1 cup of carrots chopped fine for some sweetness to all the acid in the sauce
  • Spices: 2 tbls spoons of Chili Powder, Paprika, Garlic Powder, onion powder, pepper, salt; 1 tbl spoon of ground cumin, oregano, cayenne, basil, thyme, and others to your tastes
  • 4 tbl spoons of brown sugar
  • Tsp or more depending on your tastes of kosher salt.
  • 6 oz can of good tomato paste
  • 1 14 oz can of chocolate beer
  • 1 14.5 oz cans of whole tomatoes preferably San Marzanono (the less processing the company does the better).
  • 4 tbl spoons of extra virgin olive oil (EVOO)
  • Meat: 1 pound each of Brisket, Sirloin and Pork and 5 slices of bacon – now i grind these myself but you can choose to chop if you’d like.
  • Beans: optional – add at last hour of cooking.
  • Cheese and chives or scallions to garnish

Putting it all together making the chili of your life:

Sauté the meats, you want to brown the meet with some onions until just brown. you don’t need to cook fully the goal is to render out the fat. Set aside

Sauté the veggies for 5-6 minutes until translucent, set aside

Get out the crock pot and set to low, add the meat, tomatoes, vegies, beer and spices, cover and cook 4 hours. check occasionally and add spice to taste.

That’s it, stir, taste, add seasoning as the chili combines to the perfect taste…
